Harvesting: The Envero moment
The olive needs to be harvested as soon as it is determined to have reached an optimum moment of maturation, so that it gives a premium quality oil as a result of processing. At Duernas, groups of olive pickers meet normally within the first two weeks of October, which is when the ENVERO moment typically takes place. The "Envero" is the manifestation of the continuous change in nature. This stage is the precise moment of the greatest beauty and richness of the olive grove, when young olives color the trees in green, yellow, cherry red and an almost purple hue. The pearl-like fruit, contains the freshest olive juice. This moment that we refer to as "Envero" happens during an almost momentary two week period each year.
